Stir-fried Shrimp with Vegetables (炒虾仁)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 cups mixed vegetables (such as bell peppers, snow peas, and carrots), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  2. Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Remove the shrimp from the wok and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same wok.
  4. Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.
  5. Add the mixed vegetables and stir-fry for 3-4 minutes until crisp-tender.
  6. Return the cooked shrimp to the wok.
  7. Add the soy sauce, oyster sauce, sugar, salt, and white pepper. Stir-fry for another 1-2 minutes until everything is well combined and heated through.
  8. Transfer to a serving dish and serve hot.
