Stir-Fried Tofu with Lemongrass (Cha Traop Doung K'tieu)

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 stalks of lemongrass, finely chopped
  • 3 cloves of garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sugar
  • 1 teaspoon of ground black pepper
  • 2 tablespoons of vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the garlic and lemongrass, and stir-fry for 1-2 minutes until fragrant.
  3. Add the tofu and cook for 5-7 minutes until lightly browned.
  4. Add the onion and bell pepper, and stir-fry for another 3-4 minutes.
  5. In a small bowl, mix together the soy sauce, sugar, and black pepper. Pour this sauce over the tofu and vegetables, and stir to combine.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Remove from heat and garnish with fresh cilantro.
