Stoofvlees (flemish Beef Stew)
Stoofvlees, also known as Flemish beef stew, is a classic Belgian dish that is hearty, flavorful, and perfect for a cozy meal. This slow-cooked stew is traditionally made with beer, giving it a rich and deep flavor that pairs perfectly with the tender beef and aromatic spices.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups Belgian beer
- 1 cup beef broth
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 2 bay leaves
- 4 sprigs thyme
- Salt and pepper to taste
- 2 tbsp unsalted butter
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the butter and vegetable oil over medium-high heat.
- Season the beef cubes with salt and pepper, then add them to the pot in batches to brown on all sides. Remove the beef and set aside.
- Add the chopped onions to the pot and cook until softened, then add the minced garlic and cook for another minute.
- Sprinkle the flour over the onions and garlic, stirring to coat and cook for 1-2 minutes.
- Pour in the beer and beef broth, stirring to scrape up any browned bits from the bottom of the pot.
- Return the beef to the pot, then add the brown sugar, apple cider vinegar, bay leaves, and thyme. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 2-3 hours until the beef is tender.
- Remove the bay leaves and thyme sprigs, then season with additional salt and pepper if needed.
- Serve the stoofvlees hot, accompanied by Belgian fries or crusty bread.
