Stoofvlees (flemish Beef Stew)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups Belgian beer
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 2 bay leaves
  • 4 sprigs thyme
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the butter and vegetable oil over medium-high heat.
  2. Season the beef cubes with salt and pepper, then add them to the pot in batches to brown on all sides. Remove the beef and set aside.
  3. Add the chopped onions to the pot and cook until softened, then add the minced garlic and cook for another minute.
  4. Sprinkle the flour over the onions and garlic, stirring to coat and cook for 1-2 minutes.
  5. Pour in the beer and beef broth, stirring to scrape up any browned bits from the bottom of the pot.
  6. Return the beef to the pot, then add the brown sugar, apple cider vinegar, bay leaves, and thyme. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 2-3 hours until the beef is tender.
  7. Remove the bay leaves and thyme sprigs, then season with additional salt and pepper if needed.
  8. Serve the stoofvlees hot, accompanied by Belgian fries or crusty bread.
