Strawberry Cheesecake Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking pan.
  3. In a large bowl, beat the cream cheese and 1/2 cup of granulated sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract. Pour the cream cheese mixture over the crust.
  4. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Allow to cool to room temperature, then refrigerate for at least 3 hours or overnight.
  5. In a small bowl, mix the chopped strawberries with powdered sugar. Spread the strawberry mixture over the chilled cheesecake layer.
