Strawberry Cheesecake Bars

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh strawberries, chopped
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
- In a medium bowl, mix together the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking pan.
- In a large bowl, beat the cream cheese and 1/2 cup of granulated sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract. Pour the cream cheese mixture over the crust.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Allow to cool to room temperature, then refrigerate for at least 3 hours or overnight.
- In a small bowl, mix the chopped strawberries with powdered sugar. Spread the strawberry mixture over the chilled cheesecake layer.
- Cut into bars and serve. Enjoy!
