Strawberry Rhubarb Trifle (Jordbær Rabarber Trifli)

Ingredients

  • 1 pound rhubarb, chopped
  • 1 pound strawberries, hulled and sliced

  • 2 cups custard
  • 1 cup heavy cream, whipped
  • 1 package ladyfinger cookies

Instructions

  1. In a saucepan, combine the rhubarb, strawberries, sugar, and vanilla extract. Cook over medium heat until the fruits are soft, about 15 minutes. Let the mixture cool.
  2. Layer the bottom of a trifle dish with ladyfinger cookies.

  5. Top the trifle with the whipped cream.
  6. Refrigerate for at least 2 hours before serving.
