Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon paprika
  • 1 cup vegetable broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 oz egg noodles, cooked according to package instructions

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the mushrooms and paprika to the skillet. Cook until the mushrooms are tender and any liquid has evaporated.
  3. Pour in the vegetable broth and bring to a simmer. Let it cook for a few minutes.
  4. Stir in the sour cream and season with salt and pepper. Cook for an additional 5 minutes, stirring occasionally.
  5. Serve the creamy mushroom stroganoff over the cooked egg noodles.
