Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 teaspoon paprika
- 1 cup vegetable broth
- 1 cup sour cream
- Salt and pepper to taste
- 12 oz egg noodles, cooked according to package instructions
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
- Add the mushrooms and paprika to the skillet. Cook until the mushrooms are tender and any liquid has evaporated.
- Pour in the vegetable broth and bring to a simmer. Let it cook for a few minutes.
- Stir in the sour cream and season with salt and pepper. Cook for an additional 5 minutes, stirring occasionally.
- Serve the creamy mushroom stroganoff over the cooked egg noodles.
