Stroganov (gagauz-style Beef Stroganoff)

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 oz egg noodles, cooked according to package instructions

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef slices and cook until browned. Remove the beef from the skillet and set aside.
  2. Heat the remaining 1 tablespoon of olive oil in the same skillet. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms to the skillet and cook until they release their juices and become tender.
  4. Pour in the beef broth and bring to a simmer. Return the cooked beef to the skillet.
  5. Stir in the sour cream and simmer for a few minutes until the sauce thickens. Season with salt and pepper to taste.
  6. Serve the beef stroganoff over cooked egg noodles.
