Ingredients
- 1 1/2 cups crushed Stroopwafels
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 4 eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 8 Stroopwafels for topping
Instructions
- Preheat the oven to 350°F (175°C). Mix the crushed Stroopwafels with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour until just combined.
- Pour the cream cheese mixture over the crust. Place the Stroopwafels on top of the batter, gently pressing them down.
- Bake for 40 minutes or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
