Stroopwafel Cheesecake

Ingredients

  • 1 1/2 cups crushed Stroopwafels
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 8 Stroopwafels for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Mix the crushed Stroopwafels with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
  2. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour until just combined.
  3. Pour the cream cheese mixture over the crust. Place the Stroopwafels on top of the batter, gently pressing them down.
  4. Bake for 40 minutes or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
