Stroopwafel Cheesecake Bars

Ingredients

  • 1 1/2 cups crushed stroopwafels
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
  2. In a bowl, mix the crushed stroopwafels and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a separate bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust. Drizzle the caramel sauce on top.
  5. Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  6. Allow the bars to cool at room temperature, then refrigerate for at least 3 hours before slicing into bars.
