Stroopwafel Cheesecake Bars

Ingredients
- 1 1/2 cups crushed stroopwafels
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
- In a bowl, mix the crushed stroopwafels and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a separate bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract.
- Pour the cream cheese mixture over the crust. Drizzle the caramel sauce on top.
- Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
- Allow the bars to cool at room temperature, then refrigerate for at least 3 hours before slicing into bars.
