Instructions

  2. Add the chopped onions and minced garlic, and cook until the onions are soft.
  3. Add the diced carrots, cubed potatoes, diced tomatoes, chicken broth, dried oregano, and dried thyme to the pot.
  4. Season with salt and pepper to taste, then bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour, stirring occasionally.
  6. Once the potatoes and carrots are tender, the stew is ready to serve.
