Stuffat tal-Fenek (Slow-cooked Rabbit Stew)
This traditional Maltese dish is a hearty and flavorful stew that is perfect for a cozy family dinner. The slow cooking process allows the flavors to meld together, resulting in a delicious and tender rabbit stew.
Ingredients
- 1 whole rabbit, cut into pieces
- 2 onions, chopped
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can of crushed tomatoes
- 1 cup of red wine
- 2 bay leaves
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Season the rabbit pieces with salt and pepper.
- In a large pot, brown the rabbit pieces on all sides. Remove and set aside.
- Sauté the onions and garlic until softened.
- Add the carrots and potatoes to the pot.
- Return the rabbit pieces to the pot and add the crushed tomatoes, red wine, bay leaves, and thyme.
- Simmer on low heat for 2 hours, or until the rabbit is tender.
- Season with additional salt and pepper if needed.
- Serve hot and enjoy!
