Stuffed Artichokes with Jamón (Alcachofas Rellenas de Jamón)

Ingredients

  • 4 large artichokes
  • 200g jamón, finely chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Manchego cheese
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the tops. Steam them until tender, about 20 minutes. Remove the choke and set aside.
  2. In a pan, heat the olive oil over medium heat. Sauté the onion and garlic until softened.
  3. Add the chopped jamón to the pan and cook for a few minutes until it releases its flavor.
  4. Remove the pan from the heat and stir in the breadcrumbs, Manchego cheese, and parsley. Season with salt and pepper.
  5. Preheat the oven to 180°C (350°F).
  6. Stuff the artichokes with the jamón mixture and place them in a baking dish. Bake for 15-20 minutes until the tops are golden and crispy.
  7. Serve the stuffed artichokes hot, garnished with extra parsley if desired.
