Ingredients
- 4 large artichokes
- 200g jamón, finely chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 cup breadcrumbs
- 1/4 cup grated Manchego cheese
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops. Steam them until tender, about 20 minutes. Remove the choke and set aside.
- In a pan, heat the olive oil over medium heat. Sauté the onion and garlic until softened.
- Add the chopped jamón to the pan and cook for a few minutes until it releases its flavor.
- Remove the pan from the heat and stir in the breadcrumbs, Manchego cheese, and parsley. Season with salt and pepper.
- Preheat the oven to 180°C (350°F).
- Stuff the artichokes with the jamón mixture and place them in a baking dish. Bake for 15-20 minutes until the tops are golden and crispy.
- Serve the stuffed artichokes hot, garnished with extra parsley if desired.
