Stuffed Aubergines (brungiel Mimli)

Ingredients

  • 4 large aubergines
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 200g cherry tomatoes, halved
  • 150g feta cheese, crumbled
  • 50g pine nuts
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cut the aubergines in half lengthwise and scoop out the flesh, leaving a shell about 1cm thick. Chop the scooped-out flesh and set aside.
  3. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the chopped aubergine flesh and cherry tomatoes to the pan. Cook for 5-7 minutes until the vegetables are tender.
  5. Remove the pan from the heat and stir in the crumbled feta cheese, pine nuts, dried oregano, and paprika. Season with salt and pepper.
  6. Brush the aubergine shells with the remaining olive oil and place them on a baking tray. Fill each shell with the vegetable and feta mixture.
  7. Bake in the preheated oven for 30-35 minutes, or until the aubergines are tender and the filling is golden brown.
  8. Serve the stuffed aubergines hot, garnished with fresh herbs if desired.
