Stuffed Aubergines (brungiel Mimli)
Stuffed Aubergines, known as Brungiel Mimli in Maltese, are a delicious and hearty dish that is popular in Maltese cuisine. This recipe features tender aubergines filled with a flavorful mixture of ingredients, creating a satisfying and comforting meal.
Ingredients
- 4 large aubergines
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 200g cherry tomatoes, halved
- 150g feta cheese, crumbled
- 50g pine nuts
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 200°C (400°F).
- Cut the aubergines in half lengthwise and scoop out the flesh, leaving a shell about 1cm thick. Chop the scooped-out flesh and set aside.
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the onion and garlic, and cook until softened.
- Add the chopped aubergine flesh and cherry tomatoes to the pan. Cook for 5-7 minutes until the vegetables are tender.
- Remove the pan from the heat and stir in the crumbled feta cheese, pine nuts, dried oregano, and paprika. Season with salt and pepper.
- Brush the aubergine shells with the remaining olive oil and place them on a baking tray. Fill each shell with the vegetable and feta mixture.
- Bake in the preheated oven for 30-35 minutes, or until the aubergines are tender and the filling is golden brown.
- Serve the stuffed aubergines hot, garnished with fresh herbs if desired.
