Ingredients

  • 4 ripe bananas
  • 1 cup grated coconut
  • 1/2 cup jaggery (or brown sugar)
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon fennel seeds
  • 1 cup all-purpose flour
  • 1/2 cup water
  • Oil for frying

Instructions

  1. Peel the bananas and make a lengthwise slit in each banana, being careful not to cut all the way through.
  2. In a pan, roast the grated coconut, jaggery, cardamom powder, and fennel seeds until the mixture becomes aromatic and the jaggery melts. Remove from heat and let it cool.
  3. Stuff the banana slits with the coconut filling.
  4. In a separate bowl, mix the all-purpose flour and water to make a smooth batter.
  5. Dip each stuffed banana in the batter, ensuring it is coated evenly.
  6. Heat oil in a pan and fry the stuffed bananas until they are golden brown and crispy.
  7. Remove from the oil and place on a paper towel to drain excess oil.
  8. Serve the stuffed banana rolls hot and enjoy!
