Stuffed Banana Rolls (unnakaya)
Stuffed Banana Rolls, also known as Unnakaya, are a popular sweet snack from Kerala, India. These delicious treats are made by stuffing ripe bananas with a sweet and aromatic filling, then coating them in a batter and frying until golden and crispy.
Ingredients
- 4 ripe bananas
- 1 cup grated coconut
- 1/2 cup jaggery (or brown sugar)
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon fennel seeds
- 1 cup all-purpose flour
- 1/2 cup water
- Oil for frying
Instructions
- Peel the bananas and make a lengthwise slit in each banana, being careful not to cut all the way through.
- In a pan, roast the grated coconut, jaggery, cardamom powder, and fennel seeds until the mixture becomes aromatic and the jaggery melts. Remove from heat and let it cool.
- Stuff the banana slits with the coconut filling.
- In a separate bowl, mix the all-purpose flour and water to make a smooth batter.
- Dip each stuffed banana in the batter, ensuring it is coated evenly.
- Heat oil in a pan and fry the stuffed bananas until they are golden brown and crispy.
- Remove from the oil and place on a paper towel to drain excess oil.
- Serve the stuffed banana rolls hot and enjoy!
