Ingredients

  • 4 large bell peppers
  • 1 pound ground pork
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup diced tomatoes
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground pork, cooked rice, onion, garlic, ginger, diced tomatoes, soy sauce, sesame oil, salt, and pepper.
  4. Stuff the bell peppers with the pork and rice mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is cooked through.
  7. Serve the stuffed bell peppers hot and enjoy!
