Stuffed Bell Peppers (Biber Dolması)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 250g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth

Instructions

  1. In a large bowl, mix together the rice, ground beef, onion, tomatoes, parsley, paprika, cumin, salt, and pepper.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Stuff the bell peppers with the rice and meat mixture.
  4. Place the stuffed peppers in a deep pot and pour the broth over them.
  5. Cover the pot and cook the peppers on low heat for 1 hour, or until the rice is fully cooked and the peppers are tender.
  6. Serve the Biber Dolması hot, garnished with additional parsley if desired.
