Stuffed Bell Peppers with Lamb (Etli Biber Dolması)
Etli Biber Dolması, or Stuffed Bell Peppers with Lamb, is a traditional dish in Tajik cuisine that is both flavorful and satisfying. The combination of tender lamb and aromatic spices, all encased in a sweet bell pepper, makes for a delicious and hearty meal.
Ingredients
- 4 large bell peppers
- 500g ground lamb
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the ground lamb, rice, onion, tomatoes, garlic, cumin, paprika, salt, black pepper, and parsley.
- Stuff the bell peppers with the lamb and rice mixture.
- Place the stuffed peppers in a deep pot and pour the broth over them.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Serve the Etli Biber Dolması hot, garnished with additional parsley if desired.
