Stuffed Bell Peppers with Rice and Beef (Bədəmjan Dolmasi)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 250g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried mint
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground beef, onion, tomatoes, tomato paste, paprika, dried mint, salt, and pepper.
  4. Stuff the bell peppers with the rice and beef mixture and place them in a deep pot.
  5. Pour the beef or vegetable broth over the stuffed peppers and drizzle with olive oil.
  6. Cover the pot and cook on the stovetop over medium heat for 45-50 minutes, or until the peppers are tender and the filling is cooked through.
  7. Remove the stuffed peppers from the pot and place them on a serving platter.
  8. Serve the Bədəmjan Dolmasi hot, garnished with fresh herbs if desired.
