Stuffed Bell Peppers with Rice and Beef (Bədəmjan Dolmasi)

Ingredients
- 4 large bell peppers
- 1 cup rice
- 250g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon dried mint
- Salt and pepper to taste
- 2 cups beef or vegetable broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground beef, onion, tomatoes, tomato paste, paprika, dried mint, salt, and pepper.
- Stuff the bell peppers with the rice and beef mixture and place them in a deep pot.
- Pour the beef or vegetable broth over the stuffed peppers and drizzle with olive oil.
- Cover the pot and cook on the stovetop over medium heat for 45-50 minutes, or until the peppers are tender and the filling is cooked through.
- Remove the stuffed peppers from the pot and place them on a serving platter.
- Serve the Bədəmjan Dolmasi hot, garnished with fresh herbs if desired.
