Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese

Instructions

  1. In a skillet, brown the ground beef with the diced onion and minced garlic. Season with paprika, salt, and pepper.
  2. Add the cooked rice, diced tomatoes, and beef broth to the skillet. Simmer for 10 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. Cut the tops off the bell peppers and remove the seeds and membranes.
  5. Stuff the peppers with the beef and rice mixture, then place them in a baking dish.
  6. Sprinkle the shredded cheese on top of the stuffed peppers.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender.
