Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese
Instructions
- In a skillet, brown the ground beef with the diced onion and minced garlic. Season with paprika, salt, and pepper.
- Add the cooked rice, diced tomatoes, and beef broth to the skillet. Simmer for 10 minutes.
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the peppers with the beef and rice mixture, then place them in a baking dish.
- Sprinkle the shredded cheese on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender.
- Serve the stuffed bell peppers hot and enjoy!
