Stuffed Bell Peppers with Rice (Biber Dolması)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 cup pine nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, onion, tomatoes, parsley, olive oil, salt, black pepper, paprika, cumin, and pine nuts. Mix well.
  4. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the rice is cooked.
  7. Serve the stuffed bell peppers hot and enjoy!
