Stuffed Bitter Gourd (Gutti Kakarakaya) is a popular dish in Telugu cuisine, known for its unique combination of flavors and spices. This recipe combines the bitterness of the gourd with a savory and spicy stuffing, creating a delicious and nutritious dish.
Ingredients
- 4 medium-sized bitter gourds
- 1 cup of roasted peanut powder
- 2 tablespoons of sesame seeds
- 1 tablespoon of tamarind paste
- 1 teaspoon of red chili powder
- 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder
- Salt to taste
- 2 tablespoons of oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- A pinch of asafoetida (hing)
- Fresh coriander leaves for garnish
Instructions
- Wash the bitter gourds and slit them lengthwise. Remove the seeds and inner pith.
- In a bowl, mix roasted peanut powder, sesame seeds, tamarind paste, red chili powder, coriander powder, turmeric powder, and salt to make the stuffing.
- Stuff the bitter gourds with the prepared mixture and set aside.
- Heat oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Once the seeds start to splutter, place the stuffed bitter gourds in the pan.
- Cover and cook on low heat for 15-20 minutes, turning the gourds occasionally until they are cooked through and tender.
- Garnish with fresh coriander leaves and serve hot.
