Ingredients
- 4 medium bitter gourds
- 1 cup gram flour (besan)
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 2 tablespoons oil
- Salt to taste
- 1 tablespoon lemon juice
- 2 tablespoons chopped coriander leaves
- 1 teaspoon amchur (dried mango powder)
Instructions
- Wash the bitter gourds and scrape the rough outer skin. Slit them lengthwise and remove the seeds.
- In a bowl, mix gram flour, red chili powder, turmeric powder, coriander powder, cumin seeds, fennel seeds, oil, salt, lemon juice, coriander leaves, and amchur to make the stuffing.
- Stuff the bitter gourds with the prepared mixture and secure with toothpicks.
- Heat oil in a pan and place the stuffed bitter gourds in it. Cook on low heat, turning occasionally, until they are tender and golden brown.
- Once cooked, remove the toothpicks and serve the stuffed bitter gourds hot.
