Ingredients

  • 4 medium bitter gourds
  • 1 cup gram flour (besan)
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 2 tablespoons oil
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon amchur (dried mango powder)

Instructions

  1. Wash the bitter gourds and scrape the rough outer skin. Slit them lengthwise and remove the seeds.
  2. In a bowl, mix gram flour, red chili powder, turmeric powder, coriander powder, cumin seeds, fennel seeds, oil, salt, lemon juice, coriander leaves, and amchur to make the stuffing.
  3. Stuff the bitter gourds with the prepared mixture and secure with toothpicks.
  4. Heat oil in a pan and place the stuffed bitter gourds in it. Cook on low heat, turning occasionally, until they are tender and golden brown.
  5. Once cooked, remove the toothpicks and serve the stuffed bitter gourds hot.
