Stuffed Bitter Gourd (stuffed Karela)

Ingredients

  • 4 medium-sized bitter gourds (karela)
  • 1 cup crumbled paneer (Indian cottage cheese)
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Wash the bitter gourds and scrape the rough skin. Slit them lengthwise and remove the seeds.
  2. Mix crumbled paneer, chopped onion, ginger-garlic paste, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, and salt in a bowl to make the stuffing.
  3. Stuff the bitter gourds with the prepared mixture.
  4. Heat oil in a pan and place the stuffed bitter gourds in it. Cook on low heat, turning occasionally, until the gourds are tender and the stuffing is cooked through.
  5. Serve hot with roti or rice.
