Stuffed Brinjal Curry (gutti Vankaya Koora)
Stuffed Brinjal Curry, also known as Gutti Vankaya Koora, is a popular dish from the Andhra Cuisine. This flavorful curry features small brinjals stuffed with a spicy and tangy masala, cooked to perfection.
Ingredients
- 10 small brinjals
- 1 cup roasted peanuts
- 1/2 cup desiccated coconut
- 2 onions, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions
- Wash and slit the brinjals, keeping them intact at the stem.
- In a blender, grind the roasted peanuts and desiccated coconut to a coarse powder.
- Stuff the brinjals with the peanut-coconut mixture and set aside.
- Heat oil in a pan and add the chopped onions. Sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Now add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
- Carefully place the stuffed brinjals in the pan and cook for 5 minutes.
- Add a little water, cover the pan, and let the brinjals cook on low heat for 15-20 minutes or until they are tender.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
