Stuffed Brinjal Curry (gutti Vankaya Koora)

Ingredients

  • 10 small brinjals
  • 1 cup roasted peanuts
  • 1/2 cup desiccated coconut
  • 2 onions, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Wash and slit the brinjals, keeping them intact at the stem.
  2. In a blender, grind the roasted peanuts and desiccated coconut to a coarse powder.
  3. Stuff the brinjals with the peanut-coconut mixture and set aside.
  4. Heat oil in a pan and add the chopped onions. Sauté until golden brown.
  5. Add ginger-garlic paste and sauté for a minute.
  6. Now add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
  7. Carefully place the stuffed brinjals in the pan and cook for 5 minutes.
  8. Add a little water, cover the pan, and let the brinjals cook on low heat for 15-20 minutes or until they are tender.
  9. Garnish with fresh coriander leaves and serve hot with rice or roti.
