Stuffed Brinjal Curry, also known as Gutti Vankaya Kura, is a popular dish from the Andhra Cuisine. This flavorful curry features small brinjals stuffed with a spicy and tangy masala, creating a delicious and aromatic dish that pairs perfectly with steamed rice or roti.
Ingredients
- 10 small brinjals
- 1 cup roasted peanuts
- 2 onions, finely chopped
- 1 tomato, finely chopped
- 1 tablespoon tamarind paste
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 2 tablespoons oil
- Salt to taste
Instructions
- Wash and slit the brinjals lengthwise, keeping the stems intact.
- Grind the roasted peanuts into a coarse powder and mix it with chopped onions, tomato, tamarind paste, red chili powder, coriander powder, turmeric powder, and salt.
- Stuff the brinjals with the prepared masala mixture.
- Heat oil in a pan and add cumin seeds. Place the stuffed brinjals in the pan.
- Cover and cook on low heat until the brinjals are tender, stirring occasionally.
- Once the brinjals are cooked, remove from heat and serve hot.
