Stuffed Brinjal Curry (gutti Vankaya Kura)

Ingredients

  • 10 small brinjals
  • 1 cup roasted peanuts
  • 2 onions, finely chopped
  • 1 tomato, finely chopped
  • 1 tablespoon tamarind paste
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Wash and slit the brinjals lengthwise, keeping the stems intact.
  2. Grind the roasted peanuts into a coarse powder and mix it with chopped onions, tomato, tamarind paste, red chili powder, coriander powder, turmeric powder, and salt.
  3. Stuff the brinjals with the prepared masala mixture.
  4. Heat oil in a pan and add cumin seeds. Place the stuffed brinjals in the pan.
  5. Cover and cook on low heat until the brinjals are tender, stirring occasionally.
  6. Once the brinjals are cooked, remove from heat and serve hot.
