Stuffed Cabbage Rolls (Kələm Dolmasi)

Ingredients

  • 1 large head of cabbage
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tomato paste
  • 2 cups beef or vegetable broth

Instructions

  1. Boil the whole head of cabbage in a large pot of water for 5 minutes, then carefully remove the leaves and set aside.
  2. In a bowl, mix the rice, ground beef, onion, salt, and black pepper.
  3. Place a spoonful of the filling onto each cabbage leaf, then roll them up and secure with toothpicks.
  4. In a large pot, spread a layer of cabbage leaves on the bottom, then arrange the stuffed cabbage rolls on top.
  5. Mix the tomato paste with the broth and pour over the cabbage rolls.
  6. Cover and simmer on low heat for 1 hour, or until the cabbage and filling are tender.
  7. Serve the Kələm Dolmasi hot, with a dollop of sour cream if desired.
