Stuffed Cabbage Rolls (ukrainian Holubtsi)
Stuffed Cabbage Rolls, known as Ukrainian Holubtsi, are a traditional dish in Caucasian cuisine. These delicious rolls are made with a flavorful filling wrapped in tender cabbage leaves, then simmered in a rich tomato sauce. They are a comforting and satisfying meal that is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 large head of cabbage
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon olive oil
- 1 cup beef or vegetable broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for about 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
- In a large bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, egg, parsley, salt, and pepper. Mix well to combine.
- Place a spoonful of the beef and rice mixture onto the center of each cabbage leaf. Roll the leaf, tucking in the sides, to form a tight roll. Repeat with the remaining cabbage leaves and filling.
- Heat the olive oil in a large pot over medium heat. Place the cabbage rolls seam side down in the pot. Pour the tomato sauce, diced tomatoes, and broth over the cabbage rolls. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the stuffed cabbage rolls hot, spooning the tomato sauce over the top.
