Stuffed Cabbage Rolls with Lamb and Rice (Kələm Dolmasi)

Ingredients

  • 1 large head of cabbage
  • 1 pound ground lamb
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 2 cups beef or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, mix the ground lamb, rice, onion, garlic, paprika, cumin, cinnamon, salt, and pepper.
  3. Place a spoonful of the lamb and rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Place the cabbage rolls in a large pot. Pour the tomato sauce and broth over the rolls. Cover and simmer for 1 hour.
  5. Once cooked, garnish with fresh parsley and serve hot.
