Stuffed Cabbage Rolls with Lamb and Rice (Kələm Dolmasi)
Kələm Dolmasi, or Stuffed Cabbage Rolls with Lamb and Rice, is a traditional Azerbaijani dish that is both flavorful and satisfying. This dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 large head of cabbage
- 1 pound ground lamb
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups beef or vegetable broth
- Fresh parsley for garnish
Instructions
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a bowl, mix the ground lamb, rice, onion, garlic, paprika, cumin, cinnamon, salt, and pepper.
- Place a spoonful of the lamb and rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the cabbage rolls in a large pot. Pour the tomato sauce and broth over the rolls. Cover and simmer for 1 hour.
- Once cooked, garnish with fresh parsley and serve hot.
