Ingredients
- 4 large cassava roots, peeled and halved
- 1 pound ground beef

- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 2 eggs, beaten

Instructions
- Boil the cassava in salted water until tender, about 20 minutes. Drain and set aside to cool.
- In a skillet, cook the ground beef, onion, garlic, bell pepper, and tomato until the beef is browned and the vegetables are tender. Add the cumin, paprika, salt, and pepper. Remove from heat and let it cool.
- Once the cassava is cool enough to handle, carefully scoop out the center of each cassava half to create a hollow space for the filling.
- Stuff the hollowed-out cassava with the beef mixture and sprinkle with shredded mozzarella cheese.
- Dip each stuffed cassava in beaten eggs, then coat with breadcrumbs.
- In a large skillet, heat vegetable oil over medium heat. Fry the stuffed cassava until golden brown on all sides, about 5 minutes per side.
