Ingredients

  • 1 round Edam or Gouda cheese
  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup raisins
  • 1/4 cup sliced green olives
  • 1/4 cup tomato sauce
  • 1/4 cup bread crumbs
  • 1/4 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat the vegetable oil over medium heat. Add the ground beef and cook until browned.
  2. Add the diced onion, bell pepper, tomatoes, and garlic to the skillet. Cook until the vegetables are tender.
  3. Stir in the raisins, green olives, tomato sauce, and bread crumbs. Cook for an additional 5 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Cut the top off the round of cheese and hollow out the inside, leaving a 1/2-inch thick shell.
  6. Stuff the cheese with the meat mixture and place the cheese in a baking dish.
  7. Pour the chicken broth over the stuffed cheese.
  8. Bake in the preheated oven for 30-40 minutes, until the cheese is melted and the filling is heated through.
  9. Serve the stuffed cheese hot, slicing it into wedges.
