Ingredients
- 4 boneless chicken breasts
- 1 cup grated coconut
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1/4 cup cashew nuts
- 1/4 cup raisins
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts and pound them to an even thickness.
- In a bowl, mix together grated coconut, chopped onion, green chilies, ginger-garlic paste, cashew nuts, raisins, turmeric powder, red chili powder, garam masala, and salt.
- Divide the stuffing mixture evenly and place it on one half of each chicken breast. Fold the other half over the stuffing and secure with toothpicks.
- Heat oil in a pan over medium heat and sear the stuffed chicken breasts until golden brown on both sides.
- Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Remove the toothpicks before serving.
