Stuffed Chicken (kozhi Nirachathu)

Ingredients

  • 4 boneless chicken breasts
  • 1 cup grated coconut
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/4 cup cashew nuts
  • 1/4 cup raisins
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts and pound them to an even thickness.
  3. In a bowl, mix together grated coconut, chopped onion, green chilies, ginger-garlic paste, cashew nuts, raisins, turmeric powder, red chili powder, garam masala, and salt.
  4. Divide the stuffing mixture evenly and place it on one half of each chicken breast. Fold the other half over the stuffing and secure with toothpicks.
  5. Heat oil in a pan over medium heat and sear the stuffed chicken breasts until golden brown on both sides.
  6. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  7. Remove the toothpicks before serving.
