Ingredients
- 4 small eggplants
- 1 cup chopped onions
- 1 cup diced tomatoes
- 1/2 cup green peas
- 1/2 cup paneer (Indian cottage cheese), crumbled
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Make a lengthwise slit in each eggplant, keeping the stems intact.
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add diced tomatoes, green peas, crumbled paneer, turmeric powder, coriander powder, garam masala, and salt. Cook for 5 minutes.
- Stuff the eggplants with the prepared mixture and secure with toothpicks.
- Heat oil in a pan and place the stuffed eggplants. Cover and cook on low heat for 20-25 minutes, turning occasionally, until the eggplants are tender.
- Garnish with fresh cilantro and serve hot.
