Stuffed Eggplant (Karnıyarık)

Stuffed Eggplant (Karnıyarık)

Ingredients

  • 4 medium-sized eggplants
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 green bell peppers, diced
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and score the flesh with a knife. Sprinkle with salt and let sit for 15 minutes to draw out the bitterness. Rinse and pat dry.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned. Add the onion, tomatoes, bell peppers, garlic, parsley, cumin, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
  4. Place the eggplants on a baking sheet, drizzle with the remaining olive oil, and roast in the preheated oven for 15-20 minutes until softened.
  5. Remove the eggplants from the oven and let cool slightly. Carefully scoop out some of the flesh to create a cavity for the filling.
  6. Stuff the eggplants with the ground beef mixture and return to the oven for an additional 10 minutes.
  7. Serve the Karnıyarık hot, garnished with additional parsley if desired.
