Stuffed Eggplant (Karnıyarık)
Karnıyarık is a traditional Gagauz dish that consists of stuffed eggplants with a flavorful filling. This dish is popular in Gagauz cuisine and is a delicious and hearty meal for any occasion.
Ingredients
- 4 medium-sized eggplants
- 1 lb ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 green bell peppers, diced
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and score the flesh with a knife. Sprinkle with salt and let sit for 15 minutes to draw out the bitterness. Rinse and pat dry.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned. Add the onion, tomatoes, bell peppers, garlic, parsley, cumin, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
- Place the eggplants on a baking sheet, drizzle with the remaining olive oil, and roast in the preheated oven for 15-20 minutes until softened.
- Remove the eggplants from the oven and let cool slightly. Carefully scoop out some of the flesh to create a cavity for the filling.
- Stuff the eggplants with the ground beef mixture and return to the oven for an additional 10 minutes.
- Serve the Karnıyarık hot, garnished with additional parsley if desired.
