Stuffed Eggplant with Rice and Meat (Karnıyarık)

Ingredients

  • 2 large eggplants
  • 1/2 lb ground beef
  • 1 onion, finely chopped
  • 1/2 cup rice
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and score the flesh with a knife. Sprinkle with salt and let sit for 15 minutes to draw out the bitter juices. Rinse and pat dry.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Stir in the rice, tomatoes, paprika, cumin, salt, and pepper. Cook for 5 minutes.
  5. Stuff the eggplants with the meat and rice mixture. Place them in a baking dish, drizzle with the remaining olive oil, and bake for 45-50 minutes, or until the eggplants are tender.
  6. Serve the Karnıyarık hot, and enjoy!
