Stuffed Eggplant with Rice and Meat (Karnıyarık)
Karnıyarık is a traditional Crimean Tatar dish that consists of eggplants stuffed with a flavorful mixture of rice and meat. This dish is a popular choice for a hearty and satisfying meal.
Ingredients
- 2 large eggplants
- 1/2 lb ground beef
- 1 onion, finely chopped
- 1/2 cup rice
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 3 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and score the flesh with a knife. Sprinkle with salt and let sit for 15 minutes to draw out the bitter juices. Rinse and pat dry.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Stir in the rice, tomatoes, paprika, cumin, salt, and pepper. Cook for 5 minutes.
- Stuff the eggplants with the meat and rice mixture. Place them in a baking dish, drizzle with the remaining olive oil, and bake for 45-50 minutes, or until the eggplants are tender.
- Serve the Karnıyarık hot, and enjoy!
