Stuffed Grape Leaves Soup (Yaprak Sarma Çorbası)

Ingredients
- 1 cup rice
- 1/2 cup olive oil
- 1 onion, finely chopped
- 1/4 cup pine nuts
- 1/4 cup currants
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 jar grape leaves, drained and rinsed
- 6 cups vegetable broth
- 1 lemon, juiced
Instructions
- In a large bowl, combine the rice, olive oil, onion, pine nuts, currants, dill, mint, parsley, salt, and pepper. Mix well.
- Place a grape leaf on a flat surface, shiny side down. Place a small spoonful of the rice mixture in the center of the leaf. Fold the sides of the leaf over the filling, then roll it up tightly into a small cylinder. Repeat with the remaining grape leaves and filling.
- Place the stuffed grape leaves in a large pot, seam side down, in a single layer. Pour the vegetable broth over the grape leaves. Place a heatproof plate on top of the grape leaves to keep them submerged in the broth.
- Cover the pot and bring the broth to a boil. Reduce the heat and simmer for 30 minutes, or until the rice is cooked and the grape leaves are tender.
- Stir in the lemon juice and season with salt and pepper to taste.
- Serve the Yaprak Sarma Çorbası hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs if desired.
