Stuffed Lotus Root with Glutinous Rice (糯米藕)

Ingredients

  • 1 lotus root, about 12 inches long
  • 1 cup glutinous rice, soaked for 2 hours
  • 200g ground pork
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon vegetable oil
  • 1 1/2 cups chicken broth

Instructions

  1. Rinse the lotus root and peel off the skin. Cut into 1-inch thick slices and then use a small knife to carefully hollow out each slice, creating a pocket for the filling.
  2. In a bowl, mix the soaked glutinous rice, ground pork, garlic, green onions, soy sauce, oyster sauce, sesame oil, salt, and white pepper.
  3. Stuff the lotus root slices with the rice and pork mixture, pressing firmly to fill the pockets completely.
  4. Heat vegetable oil in a pan over medium heat. Place the stuffed lotus root slices in the pan and sear until lightly browned on both sides.
  5. Pour the chicken broth into the pan, cover, and simmer for 1 hour, or until the rice is fully cooked and the lotus root is tender.
  6. Serve the stuffed lotus root with glutinous rice hot, garnished with additional green onions if desired.
