Stuffed Marrows (qarabaghli Mimli)

Ingredients

  • 4 large marrows
  • 500g ground meat (beef or pork)
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup tomato paste
  • 2 tomatoes, diced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the marrows and scoop out the seeds to create a hollow cavity.
  3. In a large bowl, mix together the ground meat, rice, onion, garlic, parsley, mint, tomato paste, diced tomatoes, olive oil, salt, and pepper.
  4. Stuff the meat and rice mixture into the hollowed-out marrows.
  5. Place the stuffed marrows in a large pot and add enough water to cover them halfway.
  6. Cover the pot and simmer over low heat for 1 hour, or until the marrows are tender and the filling is cooked through.
  7. Serve the stuffed marrows hot, garnished with additional fresh herbs if desired.
