Stuffed Mushrooms With Ivorian Couscous Filling (attiéké Stuffed Mushrooms)
These stuffed mushrooms with Ivorian couscous filling, known as Attiéké Stuffed Mushrooms, are a delightful Ivorian twist on a classic appetizer. Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup cooked Attiéké (Ivorian couscous)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Finely chop the mushroom stems and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and chopped mushroom stems. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the cooked Attiéké, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
- Fill each mushroom cap with the Attiéké mixture and place them on a baking sheet.
- Bake in the preheated oven for 20 minutes, or until the mushrooms are tender.
- Remove from the oven and garnish with chopped fresh parsley before serving.
