Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup cooked Attiéké (Ivorian couscous)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and chopped mushroom stems. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the cooked Attiéké, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
  5. Fill each mushroom cap with the Attiéké mixture and place them on a baking sheet.
  6. Bake in the preheated oven for 20 minutes, or until the mushrooms are tender.
  7. Remove from the oven and garnish with chopped fresh parsley before serving.
