Stuffed Mushrooms with Serrano Ham (Champiñones Rellenos de Jamón Serrano)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 100g Serrano ham, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Manchego cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems and set aside.
  3. In a pan, heat the olive oil over medium heat. Add the onion, garlic, and chopped mushroom stems. Cook until softened, about 5 minutes.
  4. Add the Serrano ham to the pan and cook for an additional 2 minutes.
  5. Remove the pan from the heat and stir in the breadcrumbs and Manchego cheese. Season with salt and pepper.
  6. Stuff each mushroom cap with the ham and cheese mixture and place on a baking sheet.
  7. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
