Ingredients
- 12 large mushrooms, stems removed and reserved
- 100g Serrano ham, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1/4 cup grated Manchego cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Finely chop the mushroom stems and set aside.
- In a pan, heat the olive oil over medium heat. Add the onion, garlic, and chopped mushroom stems. Cook until softened, about 5 minutes.
- Add the Serrano ham to the pan and cook for an additional 2 minutes.
- Remove the pan from the heat and stir in the breadcrumbs and Manchego cheese. Season with salt and pepper.
- Stuff each mushroom cap with the ham and cheese mixture and place on a baking sheet.
- Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
