Ingredients
- 1 cup all-purpose flour
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon salt
- 1/2 cup water
- 1/2 cup jaggery or sugar
- 1 cup grated coconut
- 1/2 teaspoon cardamom powder
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 2 cups vanilla ice cream
Instructions
- In a bowl, mix the all-purpose flour, turmeric powder, and salt. Gradually add water to form a smooth dough. Cover and let it rest for 30 minutes.
- In a separate bowl, mix the jaggery or sugar, grated coconut, cardamom powder, and chopped nuts to make the stuffing.
- Divide the dough and stuffing into 6 equal portions.
- Roll out each portion of dough into a small circle. Place a portion of stuffing in the center and seal the edges to form a stuffed pancake.
- Cook the stuffed pancakes on a hot griddle until golden brown on both sides. Set aside to cool.
- Once the stuffed pancakes are completely cool, place a scoop of vanilla ice cream on each pancake and fold it over to create a sandwich.
