Ingredients
- 3 large yellow potatoes, boiled and mashed

- 1/4 cup mayonnaise
- 1 tablespoon chopped fresh cilantro

Instructions
- In a bowl, mix the mashed potatoes with lime juice, aji amarillo paste, salt, and pepper.
- Divide the potato mixture into two equal portions.
- Layer one portion of the potato mixture in the bottom of a serving dish.
- Top with a layer of shredded chicken, avocado slices, and diced red onion.
- Spread a layer of mayonnaise over the ingredients.
- Place the remaining portion of the potato mixture on top and smooth it out.
