Stuffed Plantains with Shrimp (Plátanos Rellenos de Camarones)

Ingredients
- 4 ripe plantains
- 1 pound of medium shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1/4 cup of cilantro, chopped
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 1/4 cup of vegetable oil
Instructions
- Preheat the oven to 400°F (200°C).
- Cut off the ends of the plantains and make a slit lengthwise, being careful not to cut all the way through.
- Place the plantains on a baking sheet and bake for 15-20 minutes, or until the skins are dark and the flesh is tender.
- While the plantains are baking, prepare the shrimp filling. In a large skillet, heat the vegetable oil over medium heat.
- Add the onion, garlic, and bell pepper to the skillet and cook until softened.
- Add the shrimp, tomatoes, cumin, paprika, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the shrimp is pink and cooked through.
- Remove the skillet from the heat and stir in the chopped cilantro.
- Once the plantains are done, remove them from the oven and let them cool slightly. Carefully open the slit in each plantain and stuff them with the shrimp filling.
- Serve the stuffed plantains with your favorite side dishes and enjoy!
