Stuffed Plantains with Shrimp (Plátanos Rellenos de Camarones)

Ingredients

  • 4 ripe plantains
  • 1 pound of medium shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1/4 cup of cilantro, chopped
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1/4 cup of vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut off the ends of the plantains and make a slit lengthwise, being careful not to cut all the way through.
  3. Place the plantains on a baking sheet and bake for 15-20 minutes, or until the skins are dark and the flesh is tender.
  4. While the plantains are baking, prepare the shrimp filling. In a large skillet, heat the vegetable oil over medium heat.
  5. Add the onion, garlic, and bell pepper to the skillet and cook until softened.
  6. Add the shrimp, tomatoes, cumin, paprika, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the shrimp is pink and cooked through.
  7. Remove the skillet from the heat and stir in the chopped cilantro.
  8. Once the plantains are done, remove them from the oven and let them cool slightly. Carefully open the slit in each plantain and stuff them with the shrimp filling.
  9. Serve the stuffed plantains with your favorite side dishes and enjoy!
