Ingredients

  • 6 large yellow potatoes, boiled and mashed
  • 1/4 cup lime juice
  • 1/4 cup vegetable oil
  • 1 teaspoon aji amarillo paste
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup shredded chicken or tuna
  • 1 avocado, sliced
  • 1/2 cup mayonnaise
  • Lettuce leaves for garnish
  • Hard-boiled eggs, sliced, for garnish

Instructions

  1. In a bowl, mix the mashed potatoes with lime juice, vegetable oil, aji amarillo paste, cumin, salt, and pepper.
  2. Spread half of the mashed potato mixture in the bottom of a casserole dish.
  3. Layer the shredded chicken or tuna on top of the mashed potatoes.
  4. Place the sliced avocado on top of the chicken or tuna.
  5. Spread the remaining mashed potato mixture over the avocado to cover the filling.
  6. Top with a layer of mayonnaise and garnish with lettuce leaves and sliced hard-boiled eggs.
  7. Refrigerate for at least 1 hour before serving.
