Ingredients
- 6 large yellow potatoes, boiled and mashed
- 1/4 cup lime juice
- 1/4 cup vegetable oil
- 1 teaspoon aji amarillo paste
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup shredded chicken or tuna
- 1 avocado, sliced
- 1/2 cup mayonnaise
- Lettuce leaves for garnish
- Hard-boiled eggs, sliced, for garnish
Instructions
- In a bowl, mix the mashed potatoes with lime juice, vegetable oil, aji amarillo paste, cumin, salt, and pepper.
- Spread half of the mashed potato mixture in the bottom of a casserole dish.
- Layer the shredded chicken or tuna on top of the mashed potatoes.
- Place the sliced avocado on top of the chicken or tuna.
- Spread the remaining mashed potato mixture over the avocado to cover the filling.
- Top with a layer of mayonnaise and garnish with lettuce leaves and sliced hard-boiled eggs.
- Refrigerate for at least 1 hour before serving.
