Stuffed Potato Croquettes (papa Rellena)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. Boil the potatoes until tender, then mash them and set aside to cool.
  2. In a skillet, heat the vegetable oil and sauté the onion and garlic until softened.
  3. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned.
  4. Take a portion of the mashed potatoes, flatten it in your hand, and place a spoonful of the beef mixture in the center. Shape the potato around the filling to form a croquette.
  5. Repeat with the remaining mashed potatoes and beef mixture.
  6. Dip each croquette in flour, then in the beaten eggs, and finally coat with breadcrumbs.
  7. Heat oil in a pan and fry the croquettes until golden brown and crispy.
  8. Remove from the oil and place on a paper towel to drain excess oil.
  9. Serve hot and enjoy!
