Stuffed Potato Croquettes, known as Papa Rellena, are a popular dish in Inca Cuisine. These delicious croquettes are made with seasoned mashed potatoes stuffed with a savory filling, then breaded and fried to perfection.
Ingredients
- 4 large potatoes, peeled and diced
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- Boil the potatoes until tender, then mash them and set aside to cool.
- In a skillet, heat the vegetable oil and sauté the onion and garlic until softened.
- Add the ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned.
- Take a portion of the mashed potatoes, flatten it in your hand, and place a spoonful of the beef mixture in the center. Shape the potato around the filling to form a croquette.
- Repeat with the remaining mashed potatoes and beef mixture.
- Dip each croquette in flour, then in the beaten eggs, and finally coat with breadcrumbs.
- Heat oil in a pan and fry the croquettes until golden brown and crispy.
- Remove from the oil and place on a paper towel to drain excess oil.
- Serve hot and enjoy!
