Stuffed Potatoes (papa Rellena)
Stuffed Potatoes, or Papa Rellena, is a classic Peruvian dish that features a flavorful filling encased in a crispy mashed potato shell. This dish is a popular street food and can also be found in many Peruvian homes.
Ingredients
- 4 large potatoes, peeled and boiled
- 1 pound ground beef
- 1 onion, finely chopped
- 2 hard-boiled eggs, chopped
- 1/4 cup pitted black olives, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- Mash the boiled potatoes and let them cool.
- In a skillet, cook the ground beef and onion until the beef is browned and the onion is soft. Add the cumin, paprika, salt, and pepper. Remove from heat and let it cool.
- Take a handful of mashed potatoes and flatten it in your hand. Place a spoonful of the beef mixture, chopped eggs, and olives in the center. Shape the potato around the filling to form a ball.
- Dip the stuffed potato in the beaten eggs, then roll it in the breadcrumbs until fully coated.
- Heat the vegetable oil in a large skillet over medium heat. Fry the stuffed potatoes until golden brown on all sides.
- Remove from the oil and place on a paper towel to drain excess oil.
- Serve the stuffed potatoes hot with aji sauce or salsa criolla.
