Stuffed Potatoes (papa Rellena)

Ingredients

  • 4 large potatoes, peeled and boiled
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 cup pitted black olives, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Mash the boiled potatoes and let them cool.
  2. In a skillet, cook the ground beef and onion until the beef is browned and the onion is soft. Add the cumin, paprika, salt, and pepper. Remove from heat and let it cool.
  3. Take a handful of mashed potatoes and flatten it in your hand. Place a spoonful of the beef mixture, chopped eggs, and olives in the center. Shape the potato around the filling to form a ball.
  4. Dip the stuffed potato in the beaten eggs, then roll it in the breadcrumbs until fully coated.
  5. Heat the vegetable oil in a large skillet over medium heat. Fry the stuffed potatoes until golden brown on all sides.
  6. Remove from the oil and place on a paper towel to drain excess oil.
  7. Serve the stuffed potatoes hot with aji sauce or salsa criolla.
