Stuffed Pumpkin (armenian Ghapama)

Ingredients

  • 1 medium-sized pumpkin
  • 1 cup rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1/2 cup prunes, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup butter, melted
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the top off the pumpkin and set it aside. Scoop out the seeds and stringy flesh from the inside of the pumpkin.
  3. In a large bowl, mix together the rice, dried fruits, nuts, melted butter, honey, spices, and salt.
  4. Stuff the pumpkin with the rice mixture, packing it tightly and mounding it on the top.
  5. Place the pumpkin on a baking sheet and cover it with its lid or aluminum foil.
  6. Bake for 1 hour or until the pumpkin is tender.
  7. Remove the lid or foil and bake for an additional 15 minutes to brown the top.
  8. Let the stuffed pumpkin cool for a few minutes before slicing and serving.
