Ingredients
- 2 lbs flank steak, thinly sliced
- 1 cup cooked spinach
- 1 cup grated Parmesan cheese
- 1 red bell pepper, thinly sliced
- 1/2 cup chopped parsley
- 4 hard-boiled eggs, sliced
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 350°F.
- Lay the flank steak slices flat on a cutting board and season with salt and pepper.
- Spread the cooked spinach, Parmesan cheese, red bell pepper, parsley, and sliced hard-boiled eggs over the steak slices.
- Roll up the steak slices tightly and secure with kitchen twine.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the stuffed rolled beef on all sides until browned.
- Transfer the beef rolls to a baking dish and bake in the preheated oven for 45-50 minutes.
- Let the beef rest for 10 minutes before slicing and serving.
