Stuffed Rolled Beef (matambre)

Ingredients

  • 2 lbs flank steak, thinly sliced
  • 1 cup cooked spinach
  • 1 cup grated Parmesan cheese
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped parsley
  • 4 hard-boiled eggs, sliced
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 350°F.
  2. Lay the flank steak slices flat on a cutting board and season with salt and pepper.
  3. Spread the cooked spinach, Parmesan cheese, red bell pepper, parsley, and sliced hard-boiled eggs over the steak slices.
  4. Roll up the steak slices tightly and secure with kitchen twine.
  5. Heat the olive oil in a large skillet over medium-high heat.
  6. Sear the stuffed rolled beef on all sides until browned.
  7. Transfer the beef rolls to a baking dish and bake in the preheated oven for 45-50 minutes.
