Stuffed Squid in Spicy Tomato Sauce (Cumi-Cumi Isi Saus Pedas)

Ingredients

  • 4 medium-sized squid, cleaned and tentacles removed
  • 1 cup cooked white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • 1 tomato, diced
  • 1/2 cup tomato sauce
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons cooking oil
  • Chopped parsley for garnish

Instructions

  1. Heat 1 tablespoon of cooking oil in a pan over medium heat. Sauté the onion, garlic, and red chili until fragrant.
  2. Add the diced tomato and cook until it softens.
  3. Stir in the cooked white rice, tomato sauce, sugar, and salt. Cook for 2-3 minutes, then remove from heat.
  4. Stuff the squid tubes with the rice mixture and seal the ends with toothpicks.
  5. Heat the remaining cooking oil in a separate pan. Add the stuffed squid and cook for 3-4 minutes on each side until the squid is cooked through.
  6. Pour any remaining rice mixture into the pan, add a little water, and simmer for 5 minutes to create the spicy tomato sauce.
  7. Transfer the stuffed squid to a serving plate, pour the spicy tomato sauce over them, and garnish with chopped parsley.
