Ingredients
- 4 medium-sized squid, cleaned and tentacles removed
- 1 cup cooked white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tomato, diced
- 1/2 cup tomato sauce
- 1 teaspoon sugar
- Salt to taste
- 2 tablespoons cooking oil
- Chopped parsley for garnish
Instructions
- Heat 1 tablespoon of cooking oil in a pan over medium heat. Sauté the onion, garlic, and red chili until fragrant.
- Add the diced tomato and cook until it softens.
- Stir in the cooked white rice, tomato sauce, sugar, and salt. Cook for 2-3 minutes, then remove from heat.
- Stuff the squid tubes with the rice mixture and seal the ends with toothpicks.
- Heat the remaining cooking oil in a separate pan. Add the stuffed squid and cook for 3-4 minutes on each side until the squid is cooked through.
- Pour any remaining rice mixture into the pan, add a little water, and simmer for 5 minutes to create the spicy tomato sauce.
- Transfer the stuffed squid to a serving plate, pour the spicy tomato sauce over them, and garnish with chopped parsley.
