Ingredients
- 4 medium-sized squid
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg, beaten
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/4 cup white wine
Instructions
- Clean the squid and remove the tentacles. Chop the tentacles and set aside.
- In a bowl, combine the chopped tentacles, breadcrumbs, onion, garlic, Parmesan cheese, parsley, egg, salt, and pepper. Mix well to form the stuffing.
- Stuff the squid tubes with the prepared filling and secure the openings with toothpicks.
- Heat olive oil in a large skillet over medium heat. Add the stuffed squid and cook until golden brown on all sides, about 5 minutes.
- Pour in the crushed tomatoes, oregano, and red pepper flakes. Stir to combine.
- Add the white wine and bring the sauce to a simmer. Cover and cook for 30 minutes, or until the squid is tender.
- Remove the toothpicks and serve the stuffed squid with the tomato sauce.
