  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Clean the squid by removing the tentacles and the cartilage inside the body. Rinse thoroughly and set aside.
  2. In a bowl, mix the cooked rice, diced tomatoes, chopped onion, minced garlic, chopped parsley, and olive oil. Season with salt and pepper.
  3. Stuff the squid with the rice mixture, leaving some space at the top to secure the filling.
  4. Secure the opening of the squid with toothpicks to prevent the filling from falling out during cooking.
